Ingredients:
16 Cherries
1/2 cup Kirschwasser or Cherry Brandy
1/4 cup Sugar
1/2 cup Water
1 Vanilla Bean
or 1 teaspoon Vanilla Extract
2 Eggs
2 Tblsp Sugar
2 oz dark chocolate
1/4 cup (2 oz) butter
2 teasoons flour

Directions:
You can either use Morello Cherries
or
use a Sour Cherry, or Fresh Cherries.
Here I will use Fresh Cherries
and show you
how to pit them easily.

This is a clever way to pit cherries. Put a small head nail on a board and push the cherry through it and it will push the pit out But keep the cherry intact.

SImmer the Water, Schnapps, Vanilla Bean or Vanilla Extract,and Sugar and bring to a simmer.
Pour it over the Cherries.

Cut the chocolate into chips and place in a bowl.

Cut the butter into chips and microwave for 30 seconds at a time till it is melted. Whip together to smooth.

Crack your eggs in a larger bowl gather the sugar and flour and your hand held mixer.

Mix the eggs and sugar until it is doubled in volume

Add the melted chocolate and butter mix very slow with mixer on low or fold in with a spatula. I add a bit of the vanilla cherry syrup to the mix as well.

Add the flour and blend in slowly, as to not deflate the mix. either the mixer on real slow
Pre heat oven to 400 degrees or air fryer

Spray with non stick spray or grease with butter or oil,
and fill the ramekins up with batter 3/4 the way full.
Bake for 6 min and check to see how done they are.

They will lose their shine, but be wobbley when you jiggle them.
If it is too loose then bake for another 2 min.
They will look like this,
semi set.
Let cool for a couple minutes then remove with tongs and spatula or hot pad.

Run a knife around the edge to loosen it up.
Turn it over on a spatula or your serving plate.

Garnish with some of the Cherry Syrup, Whipped Cream and Cherries.

When you cut it open like I did here, the chocolate will ooze out like lava.
